A mindful eating workshop combined with a creative tasting menu.


On a daily basis we are being bombarded with advice on what to eat, and more specifically which nutrients to avoid. Things that used to be innocent like gluten, carbs, lactose or saturated fats are now presented as harmful toxins. Trying to eat consciously and healthily has become a daunting and worrying task.

How would it be if you could become your own nutrition expert? Mindful eating is a way to rediscover your body as an ingenious system that is perfectly capable of telling you what it needs.

In this mindful dinner you will discover some creative and refreshing ways of relating to what’s on your plate.

Workshop & Dinner

  • 4-course vegetarian gastronomic tasting menu with adapted natural wines.
  • Interactive workshop with an introduction on mindful eating.
  • Practical and concrete exercises and tools that you can implement in your daily life.
  • A mixed international crowd sitting and discussing around a long dinner table in a relaxed and cosy atmosphere.

The venue

The dinner and workshop will take place at the restaurant of Humus Botanical Gastronomy in Brussels.

While dining at the long table, all five senses are stimulated and passion for food and conversation are shared.

An exceptional menu based on organic and sustainably grown food is created, with ingredients from their own urban garden and small producers located near the city. The kitchen adapts to the seasons and to what is locally grown.

The roots of the cuisine are the land of Belgium. Going back to its culinary traditions but with a contemporary twist. The wines are natural, organic or biodynamic.

Trainer & Chef

portret!635955585006186916Nutritionist, psychotherapist and chef-sommelière Caroline Baerten accompanies people towards a balanced relationship with food. She trained in the US in Mindful Eating and founded the Centre for Mindful Eating & Nutrition (Me-Nu) in Brussels to introduce this way of conscious eating in Europe.
Caroline is a board member of the international Center for Mindful Eating, open to everyone who is interested in the principles of mindful eating.

Chef Nicolas Decloedt trained in some of the finest restaurants in Europe, such as In De Wulf (Dranouter), Mugaritz (San Sebastian) and Bon Bon (Brussels). His style of cooking is based on a passion for the finest produce and foraged edibles.
Nicolas has been paving the way for many years to introduce a vegetable-based cuisine on a gastronomic level. He has founded Humus Botanical Gastronomy in 2012.
